Healthful, Quick Vegetable Soup

ingredients

  • 1 cup red lentils
  • 1 (32 oz) box vegetable broth
  • 1 medium yellow onion, chopped
  • Olive oil
  • 4 celery stalks, backs peeled to remove strings, chopped
  • 3 or 4 carrots, chopped
  • 1 yellow squash, cut into ½” pieces
  • 1 red pepper, cut into ½” pieces
  • 1/3 butternut squash, , cut into ½” pieces
  • Salt and pepper to taste
  • Directions

    Saute onions in soup pot. Add broth. Add remaining ingredients. All salt and pepper. Simmer until all soft, about 45 minutes. Puree all in Vitamix so that soup is homogeneous. It looks and almost tastes like a cream soup but there isn’t any cream!

    You can use other vegetables and seasonings.
