Buttermilk Pancakes

ingredients

  • 1 cup flour
  • 1 tsp . sugar
  • 1/4 tsp . salt (optional)
  • 3/4 tsp . baking powder
  • 1/2 tsp . baking soda
  • 1 egg, beat lightly
  • 1 cup buttermilk
  • 1 T. melted butter
  • Directions

    Stir all dry ingredients together. Mix the egg and buttermilk together and add to dry ingredients. Stir. Add butter and stir. Makes about ten 4-inch pancakes. This will keep for several days in the refrigerator. Place the batter in a tightly sealed container, preferably with a narrow opening (after sitting, the uppermost layer of the batter will discolor and should be removed and thrown away).

    You may add chopped pecans, mashed bananas, blueberries, chocolate chips.

    *Substitution: 1 cup milk and juice of 1 lemon mixed together. Let sit for 5 minutes before mixing with egg.
