Brennan’s Bananas Foster

ingredients

  • 4 T butter
  • 1 cup brown sugar
  • 4 T banana liqueur
  • 4 bananas, cut in half lengthwise, then halved
  • 1/2 t cinnamon
  • 1/4 cup rum
  • Vanilla ice cream
  • Directions

    Melt the butter over an alcohol burner in flambé pan. Add sugar, cinnamon and banana liqueur and stir to mix. Heat for a few minutes, then place the bananas in the pan and sauté until soft and slightly browned. Add the run and allow it to heat up. Tip the pan so that the flame from the burner causes the sauce to light. Allow the sauce to flame until it dies out. Lift the bananas out of the pan and place four pieces over each serving of ice cream. Spoon the sauce over the top. Serves 4
