ingredients

  • 2 1/4 teaspoons yeast
  • 3 cups bread flour
  • 1 1/2 teaspoons salt
  • 1/4 cup sugar
  • 1 cup milk (120 degrees)
  • 1 cup butter (2 sticks)
  • 3 egg yolks (room temperature)
  • 2 tablespoons cooking oil
  • Directions

    Combine in mixing bowl with beater/paddle:

    2 1/4t. (1 package) active dry yeast

    1 Cup Bread Flour

    1 1/2t. salt

    1/4 cup sugar

    Preheat oven to 120 degrees.

    With mixer running on low speed:

    Add 1 scant cup milk (heated to 120 degrees)

    Add 3/4 cup (1 1/2 sticks) butter, room temperature

    Beat on medium speed to a smooth texture, about 2 minutes.

    Add 3 egg yolks which are at room temperature and beat until combined. Yolks may be warmed by placing them in a water bath.

    Add 2 cups of bread flour one at a time (may need to add more flour until dough does not stick to the bowl).

    Knead with dough hook 5 to 7 minutes until smooth and elastic.

    Place dough in lightly oiled plastic bowl and turn to grease top. Cover. Place in oven and turn on light. Let rise in oven until dough tests ripe (it will double in size), approx. 1 1/2 hours.

    Roll out dough onto large wooden cutting board (about 13” x 17”) that has been dusted with flour; brush the dough with melted butter (about 2 T) but do not butter the ends or the last 1” of the dough. This will make it easier to pinch loose end to the rolled dough. Roll up, pinch raw edge on the top, and slice in 12 equal pieces. Place on buttered pan and let rise in oven about one hour.

    Bake 350 degrees 20-25 minutes. Brush tops with melted butter. Makes 12 rolls.
