ingredients

  • 1 medium onion
  • 1 large red bell pepper, chopped
  • 2 cloves garlic
  • 4 cups vegetable broth or stock
  • 1/8 teaspoon pepper
  • 1/8 teaspoon chili powder
  • 1/8 teaspoon cayenne
  • 1/3 cup peanut butter – used one with heat for added flavor
  • 1/3 cup green lentils (could add more)
  • Directions

    Rehabed from the allrecipies version. Servings: 4-5 INGREDIENTS: 1T Peanut oil minced ginger ½ can crushed tomatoes with liquid carrots, chopped frozen peas (really this can take almost any veggies) 1. Heat oil in large pot over medium high heat. Cook onions and bell peppers until lightly browned and tender. 2. Stir in garlic and ginger and cook for a minute 3. Stir in tomatoes, vegetable stock, pepper, chili powder, and cayenne. Reduce heat to low and simmer uncovered 30 minutes 4. Add in lentils, carrots, peas. Bring to rolling boil to cook lentils. Simmer covered for 20 minutes 5. Stir in peanut butter until well blended 6. Season to taste & serve.
