Cajun Red Beans and Rice

ingredients

  • 2 tablespoons olive oil
  • 2 tofu/veggie sausages (or chicken sausage)
  • 1 onion
  • 1 bell pepper
  • 1 1/2 teaspoons Cajun seasoning (salt-free)
  • 3/4 teaspoons salt
  • 1/2 teaspoons dried oregano
  • 2 cloves garlic, minced
  • 1 can (15oz) red beans rinsed and drained
  • 1/4 cup water
  • 1 can no salt added diced tomatoes
  • 1/2 bunch kale
  • 1/4 teaspoon ground black pepper
  • 2-4 cups cooked brown rice
  • Directions

    Heat oil in large nonstick skillet over medium-high heat.

    Add sausage, onion, and peppers to pan. Saute 4 minutes.

    Add Cajun seasoning, salt, oregano, and garlic to pan. Cook 1 minute.

    Partially mash beans with a fork. Add beans, ΒΌ cup water, and tomatoes to pan. Bring to a boil.

    Add kale and cover to help it wilt.

    Reduce heat and simmer for 10 minutes or until thickened.

    You can add in the rice or serve over rice.
