ingredients

  • Pie Shell:
  • 2 1/4 cups flour
  • 2 1/4 t sugar
  • 1 1/2 t salt
  • 3/4 cup oil
  • 3 T milk
  • Filling:
  • 1 can pumpkin
  • 2 large eggs
  • 3/4 cup canned evaporated milk
  • 3/4 cup sugar
  • 1/4 t salt
  • 1 t cinnamon
  • 1/2 t allspice
  • 4 T butter
  • 1 t vanilla extract
  • Directions

    Pie Shell:

    Mix flour, sugar, and salt together and place in pie pan. Combine oil and milk in measuring cup. Whip with fork until cloudy. Pour over flour and mix. Press into shape in pie pan. Brush with egg. Do not need to bake.

    Filling:

    Preheat oven to 350 degrees. Combine all ingredients and stir until smooth. Pour into pie shell. Bake about I hour, until a knife inserted into the center emerges clean. The center can jiggle very slightly, because the pie ill continue to cook after you remove it from the oven.
