Quinoa Fruit and Nut Salad

ingredients

  • 1 3/4 cups quinoa (about 1 box)
  • 2 1/2 cups cups water
  • 1 cup orange juice
  • 3/4 cup dried fruit (apricots, peaches, pears, apples, cranberries, plums, etc.)
  • 1/2 cup toasted pecans
  • 1/2 tablespoon olive oil
  • juice from half a lemon
  • Directions

    1) Prepare the quinoa: Quinoa should be cooked with 2 parts liquid to 1 part dry

    quinoa. In this recipe, combine the water and orange juice and bring to a boil. One the liquid is at a boil, add quinoa and simmer covered for 15-18 minutes (can also use rice cooker to prepare quinoa). Once the quinoa has sprouted (you see the white ring), fluff the quinoa, remove from heat, and set aside for 5 minutes covered.

    2) While quinoa is cooking, prepare the pecans and dried fruit. Fruit should be cut into small bits, about the size of a raisin or cranberry. To toast the pecans place on baking sheet in oven at 350 for 8-10 minutes, toss once or twice while baking. A toaster oven can also be used.

    3) Add dried fruit, toasted pecans, olive oil and lemon to the quinoa. May adjust olive oil and lemon to taste. Can be served at any temperature.
