Chicken Bulgur Stir Fry

ingredients

  • 1 boneless breast
  • 1/2 cup bulgur
  • 1/2 cup chicken broth
  • 3/4 cup water
  • Assorted steamed veggies, chopped
  • Salt and pepper to taste
  • Olive oil
  • Low salt soy sauce, optional
  • Veri Veri Teriyaki, optional
  • Directions

    Place bulgur, water and chicken broth into pot. Bring to a boil, cover and reduce heat. Cook until most of the liquid is absorbed, about 10 minutes, and then let stand 5 minutes covered. While the bulgur is cooking, steam veggies (I like carrots, snow peas, bamboo shoots, and broccoli) and cut into small pieces. Marinate chicken in Veri Veri Teriyaki (optional). Cook chicken on the grill, coating it with olive oil and seasoning it with salt and pepper. Cut chicken into bite size pieces. Combine chicken, veggies, and bulgur. May wish to serve with low salt soy sauce.
